This easy vegan recipe allows for a delicious and healthy meal from the comfort of your own home! The dish takes 15 minutes to prep and 15 to cook, and serves 4 people.
Ingredients -
200g vermicelli rice noodles
1 tbsp mild curry powder
1/4 tsp tumeric
1 tsp caster sugar
1 tbsp sesame oil
2 tbsp sunflower oil
1 onion, sliced
1 pepper, sliced
200g beansprouts
1 red chilli, sliced
Method -
Place the noodles in boiled water and allow to soften for 5-10 minutes. Mix the curry powder, tumeric, sugar, sesame oil, soy sauce and 1 tbsp of water in a bowl.
Heat the wok and once very hot add the oil, onion and pepper. Stir-fry for 3-4 minutes until they begin to turn brown. Drain the noodles and ass to the pan, along with the sauce mix and beansprouts. Stir-fry for a further 3-4 minutes, tossing through the sauce, until hot.
